White Chocolate Fudge

vegan soft caramels with a touch of salt

Fudge – yummy soft caramels that originate from North America and Great Britain. Compared to other caramels or toffees, fudge is a bit crumbly and you don’t immediately bite your teeth on it. Traditionally, fudge is made from butter, sugar and milk or cream. Our vegan White Chocolate Fudge is based on cashew butter, which is refined with iChoc “White Vanilla” chocolate. Instead of sugar, we use maple syrup and add a touch of salt on top. A quick and easy recipe that is guaranteed to succeed.

Ingredients

For a 15 x 15 cm square cake tin

  • 260 g cashew puree
  • 80 g
  • 80 g maple syrup
  • 1/4 tsp ground Bourbon vanilla (optional)
  • 1 pinch of coarse salt

How to make it

1.Put all the ingredients, except the salt, into a food processor and blend for 5 seconds until just combined (longer blending will cause the oil to separate from the mixture).

2.Line a 15 x 15cm cake tin with baking paper and pour in the mixture. Smooth it out with a spoon.

3. Put the tin in the freezer for at least 2 hours, or until the mixture is hard. Then cut into small cubes, garnish each with a few grains of salt and serve thawed.
