Chocolate gingerbread cookies

Homemade pre-Christmas treats made with purely vegan ingredients

When it comes to snacking, the Advent season is hard to beat. When it comes to Christmas sweets, gingerbread ranks second on the list of favorites. For 68% of Germans, no celebration is complete without this spiced biscuit, which is also popular coated in chocolate. However, the supermarket shelves often look rather bleak for vegans, especially in the “whole milk” section. So today, we’re going to get to work and bake our own delicious iChoc gingerbread – it’s not that difficult!

Ingredients

For approx. 14 pieces with a diameter of 50 mm

For the gingerbread:

  • 14 Baking wafers (Ø 50 mm)
  • 100 g Peeled almonds
  • 35 g Walnuts
  • 25 g Dried pitted dates
  • 1 tsp Gingerbread spice
  • ½ tsp Baking soda
  • 1 pinch of Salt
  • 40 g quince jelly (or other jelly of your choice)
  • 1 tbsp Water
  • 1 tsp Rice or fruit vinegar

For the glaze:

  • 80 g iChoc Planty Classic chocolate
  • 1 tsp neutral oil, e.g. canola oil
  • Walnuts and/or almonds for decoration

How to make it

1. Place the almonds, walnuts, and dates in a blender and grind. The result may be coarser than flour. Pour into a bowl.

2. Add the gingerbread spice, baking soda, and salt and mix well. Now add the quince jelly and water and stir with a spoon. Finally, stir in the rice vinegar.

3. Using a small spoon, place the mixture onto the baking wafers and spread carefully with a knife.

4. Place on a baking sheet lined with parchment paper and bake in a preheated oven at 160 °C top/bottom heat for approx. 20–25 minutes.

5. For the glaze, melt the chocolate together with oil in a double boiler. Coat the cooled gingerbread thinly with chocolate and decorate with walnuts and/or almonds as desired.
