Vegan Marshmallow Brownies With White Chocolate

Delicious upgrade of a classic cake

Fluffy brownies are one of THE classic chocolate cakes and are perfect for any occasion. The great thing about the small cake squares: With just a little effort, you can create great variations that turn every brownie into something unique. Today’s upgrade is crowned with a delicious topping of grilled marshamllows and iChoc White Vanilla Chocolate. Just get baking – our Vegan Marshmallow Brownies are super easy and quick to make and are guaranteed to succeed.


For a square baking tin / baking frame with 20 x 30 cm; makes 12 pieces

For the dough

  • 200 g white spelt flour
  • 30 g baking cocoa powder
  • 1 sachet vanilla sugar
  • 1 sachet baking powder
  • 0,5 tsp salt
  • 150 ml maple syrup
  • 60 ml neutral vegetable oil
  • 150 ml water

For the topping

  • 80 g vegan (mini-) marshmallows
  • 1 bar iChoc White Vanilla Chocolate

How to make it

1. Preheat the oven to 190 °C fan.

2. First place the spelt flour, cocoa powder, vanilla sugar, baking powder and salt in a mixing bowl and mix together. Then add the maple syrup, vegetable oil and water and mix well until a smooth dough is formed.

3. Line a baking tin or baking frame with baking paper and pour in the dough. Bake in the oven on the middle shelf for 25 minutes. Then leave to cool for 10 minutes.

4. Switch the oven to the grill function and set to 200 °C.

5. Spread the mini marshmallows evenly over the baked brownie, leaving a little space between them. If you are baking with normal sized marshmallows, simply cut them into quarters with a sharp knife beforehand.

6. Place the baking tray on the top shelf and grill the marshmallows for about 5 minutes until they are lightly browned. Keep a constant eye on the marshmallows to make sure they don’t get too brown.

7. After baking, leave to cool and then cut into 12 equal pieces.

8. Break the chocolate into pieces. Finely chop 3-4 pieces and set aside. Melt the rest slowly in a bain-marie.

9. Spread the melted chocolate decoratively over the brownies using a tablespoon. Then sprinkle over the chopped chocolate. Leave everything to cool until the chocolate has set.
